  • 8 ounces non-fat cream cheese
  • 5 packages artificial sweetener
  • 2 bananas
  • 1 10-ounce can crushed pineapple
  • 1 10-ounce package unsweetened strawberries
  • 8 ounces fat-free whipped topping

Place all ingredients except for whipped topping into a blender. Blend for several seconds. Stir whipped topping into blended ingredients. Freeze in a 9-inch square pan. Makes 12 servings.

Right now is strawberry season. thinking strawberry shortcake? pffff, so over-rated. try out [strawberry] & goji instead.

This fruit is the very first to blossom in the spring, and are so juicy and succulent this time of year. but who ever thought strawberries are not actually a berry, but the enlarged receptacle of a flower? sounds like these strawberries are some pretty seedy characters.

well, that is to be expected. with over 200 seeds in each berry, they are the most prolific fruit on the planet! i guess we will be looking at strawberry fields forever, which is lucky for us strawberry-lovers.

so what constitutes a strawberry lover? in a recent national survey, strawberry-lovers were described as healthy, fun-loving, intelligent and happy. non-strawberry lovers were described as weird, boring, stuffy, picky and fussy eaters. add some strawberries to your mix today and make the world and yourself a little more fun!

Spinach Salad With Strawberries


Honey Mustard Dressing (see recipe below)
2 bunches fresh spinach leaves, washed, dried, and chilled
1 cup thickly sliced fresh strawberries
1 tablespoon sliced almonds or sesame seeds, toasted
1 small red onion, thinly-sliced (optional)

Prepare Honey Mustard Dressing; set aside.

Remove stems and veins from spinach and tear into bite-sized pieces; place into a large salad bowl.

Toss spinach with 1/4 cup of Honey Mustard Dressing for every 6 cups of spinach greens; toss gently. Add strawberries, sliced almonds or sesame seeds, and onion; toss again and serve.

Makes 6 to 8 servings.

HONEY MUSTARD DRESSING:
2 tablespoons good-quality balsamic vinegar
2 tablespoons rice vinegar
1 tablespoon plus 1 teaspoon honey
2 teaspoons Dijon mustard
Coarse salt and freshly-ground pepper to taste

In a small jar with a lid, combine balsamic vinegar, rice vinegar, honey, Dijon mustard, salt, and pepper; cover securely and shake vigorously. Store, covered, in the refrigerator. Serve at room temperature.
